Blog Every Day in May {Day 10}

Day 10, Friday: Most embarrassing moment (s). Spill.

Ok, I've had a few embarrassing moments in my life, but this one is one of the first that
came to mind so we're gonna go with it!

{ to give you an idea of the setting }
Picture it: I was a freshman in high school and I had a HUGE crush on this senior boy on the Guys' Volleyball team at my school. Since I didn't make the Co-Ed team my first year, I decided to be a manager (and take care of my service learning hours at the same time). So, at one of the games, I'm in the bleachers drooling over my crush watching the guys' game and at some point my friend wants to go outside of the gym for whatever reason. So we start walking down the bleachers....of course I didn't take the stairs--I was WAY too cool for that.

Well, little old me accidentally steps on a clip board that was left on the bleacher.

I slip on it.

I fall.

The clip board goes flying.

And clattering against the bleachers.

And the worst part is that it was during a time-out so the entire gym was quiet. Dead quiet.

Cue: me. MORTIFIED.

I may or may not have ran out of the gym and proceeded to cry with my friend in the bathroom (although, let's be real, it's hard to separate all of the times I cried in the bathroom with a friend during these years lol).

Needless to say I was bruised. Body and ego.

Luckily that night on AIM (you remember AIM?), my crush and I chatted, I made a joke of it, and it was all good. At least that's how I remember it anyway :)

Nothing like being humiliated in your teenage years. Especially when a guy is involved haha.

Just remembering this makes me shudder!

Blog Every Day in May {Day 9}

Day 9, Thursday: A moment in your day (this can be just a photo or both a photo and words)

This is where I spend a good portion of my day working with kiddos, playing games and exercising their brains! And, hopefully getting them S-M-A-R-T! :)

Blog Every Day in May {Day 8}

Day 8, Wednesday: A piece of advice you have for others. Anything at all.

I guess my biggest piece of advice to others, and to myself since I constantly need to remind myself of this, is to try not to worry too much.

There are things you can change, and things you can't.
There are things that are going to happen, and there are things that won't.

But, worrying about the what-if's takes away from "today" and the great things that are happening all around you. I don't wanna miss out on those cuz I'm too busy worrying about something that may or may not happen!

I'm a self-proclaimed worrier, and I'm constantly working on making this better, because it doesn't serve any purpose. It only occupies my time and doesn't fix anything.
{via}
It's something I'll probably have to keep working on my whole life (especially when I become a parent one day--EEK!), since it's in my nature to worry. But, as I've gotten older, it's gotten a little bit easier. And, with the help of my great friends who I have in my life (you know, the ones who smack you in the face *not literally* and tell you to calm the heck down), it's gotten less and less too! :)

WILW and Oh How Pinteresting

How lucky are you guys today? Two awesome posts in one day, multiple days in a row!!

Are ya sick of me yet? I hope not!! :)
Cuz it's time to link up with Jamie and Michelle for some WILW and Oh How Pinteresting

I'm loving the super yummy Cajun Shrimp and Rice dish I made on Monday. Thank you, Pinterest!
And, don't worry, I'll be sharing this super yum recipe with you soon, so keep those eyes peeled!

I'm loving that I got my new white and rose-gold watch sized and it doesn't look TOO big on my little baby wrist. I even got a compliment from a coworker and a parent when I wore it yesterday!

I'm loving that the parents at my school are going above and beyond to show their appreciation for the teachers at my school, even those resource teachers like me! I've never, in my 6 years of working in the schools, been so spoiled as I have been here in the past 2 days. And apparently there is more to come the rest of the week! It's nice to feel like someone appreciates the hard work that you do, and it's amazing what a difference that can make in the day-to-day!

I'm loving that I can take a picture of an outfit I'm unsure of, from inside of a dressing room, send it to my friends, and get their honest opinions on it. Even tho I feel like a total tool doing it, what else am I supposed to do when my girls aren't there for fashion advice and support? :)
(And while we're at it, what do you girls think of the dress? Worth $73 on sale from $99? Where would YOU wear it?)

I'm loving that even Chipotle is celebrating teachers, by having a buy one get one last night. Needless to say, MG and I took advantage. To hell with healthy eating every once in a while for a good cause....the cause, in this case, being: ME! haha

And, as always, I love Pinterest, cuz it gives me such good ideas and recipes, like the one above!

This week I've been pinning...
You've probably noticed, I've been a little obsessed with dresses lately.
Love how cute and simple this is, and the pop of color!
I love the console with the baskets. Totally want this for our place

Simple Shrimp and Guacamole Tostadas
Totally, 100% making these at some point!
Tired after a hard day's work! So flipping cute!
That's my theory, and I'm sticking with it!!
Follow Me on Pinterest Check out some of the other cool ish I've been pinning! (You know you want to!) :)
Happy Wednesday, friends!

Blog Every Day in May {Day 7}

Day 7, Tuesday: The thing(s) you're most afraid of

Oh man, I guess this depends on how deep I wanna take it, so let's just jump right on into the deep end...Here goes!

~what going to school/the world is going to be like for my kids, whenever I have kids, considering how scary things can be in today's world~

~ending up alone, for whatever reason~

~not being able to keep in shape the way I want to (might sound vain to others but I have my reasons)~

~drowning~

~my parents dying~

These are kinda heavy, but there ya have it!
I kept it to a minimum of 5 cuz I don't wanna be a total downer.

On a lighter note,

I'm scared of a world without semi-trashy tv. Cuz then what would I watch to rot my brain, and gossip with other girls about? :)

Recipe: Parmesan Garlic Quinoa

I've been at it again--another pinterest recipe, and this one was a spur of the moment trial, since I didn't know what I wanted for dinner, MG was out of town, and I realized I had everything on hand to make this dish.

Now, the original website claims that you'll never eat Mac and Cheese again.
I strongly disagree.
Don't get me wrong, this is still a yummy dish, but it doesn't even come close to a mac and cheese-like dish. At all. It has more of an Italian pasta type of taste because of the basil, so keep that in mind when/if you make this. I was a little disappointed cuz I was hoping for Mac and Cheese and it just wasn't in that category.

Anyway, let's get to this recipe. It's really easy.

What You Need

-1 cup quinoa, rinsed if needed
-2 cups water
-1 tsp minced chopped garlic from a jar (or 2 cloves chopped)
-1 medium white onion, chopped
-1 Tbsp. olive oil
-2 tsp. dried basil
-1/2 tsp. each of salt, black pepper, red pepper flakes
-1/2 cup parmesan cheese, divided

For me, this made a little more than 2 good-sized portions.

What You Do

1. Rinse the quinoa if you need to. Mine was organic and already rinsed. Easy peasy.
2. Heat up the oil in a medium-large sauce pan. Add in the onions and saute for about 4-5 minutes. Add in the minced garlic and allow it to heat up for about a minute. Make sure you stir it so that the garlic doesn't burn.

3. Add in the water and quinoa and bring it to a boil. Once boiling, lower the heat, cover the pot and let simmer for 10-15 minutes (follow the directions on your quinoa. Mine took 15 minutes).
You'll know it's done when the tails of the quinoa pop and there's very little liquid left.
(tried to give you a close-up in the last picture so you know what it looks like)
4. Mix in your salt, black pepper, red pepper flakes, and 1/3 cup of parmesan cheese. If you like it more creamy, you can add in more cheese (I added in a little bit of cheddar cheese into it once I tried it, to make it a little more cheesy).

5. Serve it up! Add some black pepper and parmesan cheese on top for garnish.

Let me know what you think if you try it! I ate this as a main dish with a side salad and was full, but I could easily see this as a side dish, too. Then you could get a little more serving size out of it in slightly smaller portions.

Hope you like it!

Day 6, Monday: If you couldn't answer with your job, how would you answer the question, 'what do you do'?

Hmmm, without my job to answer this, it's kinda tricky.

I think my main answer here would be: I try and make the best of every day, grow a little bit to better myself, learn something new, and foster my relationships with people the best that I can.

Some days that goes better than others, but I keep at it :)
~~~
And then, a really simple, and obvious answer would be....
Pinterest. I do a lot of Pinterest :)
