Recipes Lately

Last week I decided to try a couple of new recipes in the kitchen, and this week I did another one.
These times, I didn't take pictures of all of my steps or anything like that because really, I'm not sure how many of you actually read them soooo, I thought I'd just share the ones I made and my thoughts on whether or not you should make them. Sound good?

The first meal I made was this Tuscan Chicken Skillet from The Wanderlust Kitchen

It was super flavorful, and came out as almost more of a stew consistency. Also, it was really easy to make. HIGHLY recommend, unless you don't like mushrooms, then you shouldn't make it. It was great as leftovers, too.

The other meal I attempted last week was from my girl over at Damn Delicious who hasn't failed me yet when it comes to good recipes. I tried making her PF Chang's copy cat Lettuce wraps

This one was REALLY tasty and super flavorful. I haven't had the lettuce wraps from P.F. Chang's in a long time (mainly because it's totally not healthy at all) but it was always one of my favorite things to get when I would go there.  I like knowing the ingredients that I'm putting into things that I'm eating and you don't really get that when you go to a restaurant, so copy cat recipes are sometimes the best. I think the only thing that I left out of this recipe was the green onions because I usually pick them out anyway. These were super easy to make (very little effort involved) and were great as leftovers, too. I'll definitely be making these again.

On Monday night I decided to make the Sriracha Shrimp and Zucchini Lo Mein from Baker by Nature

This one was pretty spicy. I had to make another half portion of the sauce in order to get it really flavorful, though. I also added water chestnuts and bean sprouts to the recipe to add a little extra something-something. This one made a big clean up (you need several different bowls for different things throughout), and took a decent amount of time and effort. If I had the time and wasn't starving, I'd maybe make this again and add in some shredded carrots or something too, but otherwise for the amount of effort it took, I'd probably just order it as take-out.

That's what's been cookin' in my kitchen lately. I also have the ingredients for broccoli cheddar soup (my absolute favorite soup in the entire world), but I haven't made that yet this week.

What do you think about my format for this? Do you prefer the full blown recipe with the steps and pictures, or just my take on the ones Ive found and tried? Let me know!

  1. I would like to see the steps so I know how much effort I'd have to put into things. I'd like to make the lettuce wraps and that pasta thing one day

  4. That Tuscan chicken skillet looks and sounds amazing! I might have to try that! And the sriracha one sounds good too but I think I'd replace the shrimp with chicken since I'm not a shrimp fan! :)

  7. I could eat salads all day, but I hate lettuce wraps. I'd rather just have the same ingredients mixed like a salad. Makes no sense, but that's how I roll!
