{Recipe Files}: Portobello and Poblano Fajitas+Some Love

I shared with you all last week that I had a friend and her husband over and my friend eats vegan. I've never intentionally cooked vegan, and being a cheese-lover, most of my meals have some kind of cheese in it.

Luckily I found this really tasty recipe on Pinterest--of course, and it was a success (and really easy, too!)
Original recipe makes 2-3 servings. This recipe is for 4-6.
What You Need:

-4 large portobello mushroom caps, sliced (long and skinny)
-4 bell peppers (I did 2 red, 2 yellow), thinly sliced
-2 poblano peppers, seeds removed and thinly sliced
-1 medium onion, cut into long slices
-Olive oil
-tortillas (8+)
-cumin
-garlic powder
-sea salt
-sliced jalapeno (I accidentally left these out and it was still good)
*Optional: A1 sauce
Toppings: guacamole, salsa, sour cream (non-vegan)

What You Do:
1. Heat a large skillet over medium heat. Add in a dash of olive oil followed by the onion and peppers (bell, poblano and jalapeƱo peppers). Season with salt, cumin and garlic powder. (I added a few shakes, stirred, and then added a few more shakes of each)
Stir often and cook until soft and slightly caramelized. 

2. While the peppers and onions are cooking, get a medium skillet and add a dash of olive oil and then the mushrooms. Season with some salt and cook until brown. 
If you want a bit of added flavor, add in the A1 sauce and mix until mushrooms are coated.

3. Warm the tortillas in the microwave. Then prepare your fajitas. I added sour cream (not vegan), mushrooms, peppers, guac and salsa.
This made enough for 2 fajitas per person, plus 2-3 extras.

These came together so easily and were so full of flavor! There were no leftovers when we were done and everyone said how good they were. My meat-loving husband said that he would have liked meat in them, but that they were still good the way they were (I'd just load up on the mushrooms for the meat lovers so it feels more hearty).

  9. Okay, I'll admit that I hate mushrooms... like HATE! Sad day for me and this recipe, ha ha! But I'm still gonna try it and just do chicken instead of the mushrooms! Love when you post recipes!!

  14. We love making chicken and sometimes ground turkey fajitas with peppers but I'll have to try out portobello mushrooms next time...sounds delish!

  15. Mushrooms are my absolute FAV. I love them on pizza, in pasta, in quiche...YUM! So this will have to be made in the near future! :) thanks for sharing!
