If you saw my Snapchat last week, you saw this delicious bubbly cheesy meal fresh out of the oven!
This one is so quick and easy to throw together, and it is so tasty! MG loves this meal, too. I first made this for my friend when she was going through chemo--her husband doesn't eat vegetables (like at all), and he even devoured and loved this meal.
What You Need:
-1 12.5 oz can of chicken breast, drained
-1 package frozen broccoli, cooked in microwave
-1 can cream of chicken soup (we do the reduced sodium because that stuff is LOADED)
-2 Cups cooked rice
-1.5 Cups shredded cheddar cheese
-1/2 C light mayo
1/2-3/4 C corn flakes, crushed
-2 Tbsp butter, melted
What You Do:
1. Preheat the oven to 350 F. Grease a 9x13 baking dish (8x8 or 9x9 would work too)
2. Mix all of the ingredients together in the baking dish, except for the corn flakes and the butter. Mix well.
3. Sprinkle the crushed corn flakes over the top of the casserole, and then drizzle the butter over the top.
4. Bake for 30-35 minutes.
Trust me, this dish is SO tasty. It doesn't photograph well, but oh my goodness is it super delicious. Even better? It makes about 4-5 servings, is still tasty as leftovers the next day, and it fits my carb count! Boom!
