Girl Time and Mexican Food

Happy Monday, all! Hopefully you're not suffering from a case of the manic Mondays, especially in light of the military's accomplishment with Osama Bin Laden. I woke up and had NO idea what had happened since the news was on commercial when I turned it on. Then I opened up Yahoo's main page and WHAM! There it was! A big, heartfelt thank you goes out to the military and our military families for all of the hard work and sacrifice you all make for the freedom of the rest of us!

Now, on to the less "heavy" stuff....

This weekend I got to spend time with my college roomie who I haven't seen since my surprise birthday party. My college roomie, and my current roomie and I all went out to see Water for Elephants. I liked the movie a lot. I thought it was well done and I love love loved the elephant, Rosie, in the film! I think I was a little distracted throughout the movie, though, because I had very recently finished reading the book, so a good majority of the movie I was thinking about how the movie and the book were different. I kind of wish I had had a little more distance from the book when I saw the movie so my mind wasn't as preoccupied with it. Still loved it tho! I think Rob did a nice job of getting away from his vampire character (altho I couldn't help thinking about it when he was jumping on top of the trains hehe).

{I would have loved these enchiladas}
We also went to get Mexican food (one of my most faves ever!) and margaritas afterwards for some girl talk. I discovered that one of my favorite Mexican restaurant here, Chevy's, has "updated" their menu, meaning that there are smaller portions and things taste different. I always order the Beef enchiladas (mmmm) with the Spanish rice and black beans. I LOVE Spanish rice, maybe more than the enchiladas, and the rice they had was tasteless. Uber disappointment. I'm hoping this is just a result of a bad cook and not the "menu update." And my enchiladas had maybe 8 pieces of shredded cheese on it. Hello??? Best part of the enchilada!!! Overall, I was majorly disappointed with the meal. I'm hoping that it will be better, otherwise I will be sad. Probably beyond what should be acceptable....but I can't help it. I love it so!!! Am I crazy??? Do you have a restaurant/food that you love, that if it was changed (for the worse) that you would be bummed over?? Tell me I'm normal! haha

And now we are back to Monday. 33 more days of school with kiddos!!! Just gotta make it through, and then the packing/moving mayhem will ensue! And, I can't wait! That much closer to no more Long Distance!!!

I hope you all had a great weekend! Did you guys get into anything fun??

  2. Bummer about the food! I have not read the book or seen the movie, but I heard the circus stuff was all filmed in Wisconsin, or at least using items from Circus World museum and they did all their research there. So I feel connected to the movie, anyway.
