Cayenne Rubbed Chicken recipe

Hey happy people! It's Thursday, and although I dont have tomorrow off like many of you fortunate folks (who I am silently cursing under my breath), it is a day without students, a day where I can wear jeans to work, and therefore I'm ok with it!

I wanted to share with you a recipe that MG and I made on Tuesday night...it's SUPER flavorful, and really healthy (I don't think there's anything in here that ISNT good for you). I found it via Pinterest:

Here's what you need:
1/4 tsp pepper
1 tsp salt
1 tsp cayenne pepper  (this is different from the recipe, but I found it to be necessary to have enough to rub all over the chicken)
4 boneless skinless chicken breast halves (we made two breasts; I could see this being good with tenderloins too)
1 medium red onion, finely diced
2 tablespoons fresh lime juice (we used the kind that comes in the plastic lime)
1 avocado, pitted and cut into chunks
2 tablespoons olive oil (if you are cooking on the stove)

Directions:
1) mix the salt, pepper and the cayenne pepper in a small bowl. Rub this all over the chicken pieces that you have (take a note from me...don't just dunk it into the bowl. It becomes WAY spicy in some places)

2) In a large skillet, add the olive oil and heat over medium. Place the chicken in and cook until browned on the outside and cooked in the middle (8-10 minutes).  Here, MG and I broiled the chicken and I think it took about 10 minutes. Tasted just fine!

3) While the chicken is cooking, mix the onion and the lime juice. Let it sit until the chicken is done, and then just before serving, add the avocado chunks to the mix. Spoon the entire mixture over the chicken pieces and serve up.

We were going to eat this with asparagus and mushrooms but had eaten some guac and chips while making this, and decided that we both weren't really hungry for anything else.

The meal was SUPER flavorful and, MG suggested that if you had leftovers, it would be good cut up into a wrap or a sandwich. I think it would work.

  2. YUM!!!! That sounds delish, was it spicy though? I'm a wuss and can't do spicy at ALL!

    So funny, I actually had a mushroom and asparagus sautee the other night and decided to sprinkle a couple of goat cheese crumbles on top of that....could have eaten a whole huge plate of just that, it was so good.
