My word, do I have a fast and incredibly easy appetizer that is guaranteed to please any crowd!
Well, unless they don't like cheese. And if they don't like cheese, I don't think you should associate with them.
Just kidding :)
I first saw this recipe at Shari's Daily Dish, and then have seen it all over Pinterest since. Since I needed a relatively simple dish that I could take over easily to our friend's place for our New Years party, I decided to try this one out.
I'm glad I did. So was everyone else at the party.
I forgot to take a pic of the ingredients, but here's what you need:
-Extra virgin olive oil (enough to coat the bottom of whatever dish you're putting it in)
-3-4 roma tomatoes
-one bunch of green onions
-Greek Seasoning
-feta cheese (either a block or already crumbled), about 8 ounces
-1 baguette
What You Do:
1. Pour the olive oil into the bottom of whatever plate/platter you're using. Don't go over-board (I did a little bit). You can always add a little bit more later if it's too dry.
2. Chop up your tomatoes and green onions. Add it on top of the oil.
3. Add the crumbled feta cheese on top of the tomatoes and onions.
4. Add about 3 teaspoons of Greek Seasoning on top (this brand was Cavenders and I found it easily in the spice aisle at the grocery store). Mix it all up!
5. Serve it up with slices of the baguette. We also ate it with some pita chips.
Realistically, I probably could have eaten it with just a spoon :)
I liked this dish because it was easy to put a top on and bring to the party with us, it was easy to put together, and it was incredibly flavorful!
I did refrigerate it prior to the party and it turned out fine (I'd been nervous that the oil would do weird things if it was chilled, but it was all good).
Enjoy the flavor, and listening to your friends rave about how delicious it is!
And try not to eat all of it yourself :)
