Recipe: Quinoa w/ Pesto, Artichokes and Sun-Dried Tomatoes

I realized that I never posted this delicious quinoa recipe that I teased you all with a few weeks ago. And what better time for a healthy recipe than when we are all trying to get back on track after the massive amounts of holiday eating that just happened?

I found this recipe on Pinterest (duh) and couldn't wait to try it since it has some of my favorite things in it! The original recipe is made with kale pesto, but I just used the jar of pesto that I had on hand.

What You Need:
-1 cup dried quinoa (not cooked)
-4-5 Tbsp pesto (I used 5 bc my jar was almost empty)
-6oz jar artichokes, drained
-1/3 Cup sun-dried tomatoes, drained, roughly chopped
-salt/pepper to taste
-Parmesan cheese (optional)

What You Do:

1. Cook the quinoa according to the package directions. Mine called for 2 cups of water and took about 18 minutes to cook up where the water was absorbed. Once cooked, remove it from the heat, fluff it with a fork and let it cool:
2. Add the quinoa to a bowl and toss it with the pesto
3. Add in the artichoke hearts and the sun-dried tomatoes. Then add in salt and pepper to taste (I only added pepper). 
4. Add in Paremsan cheese if desired. Shredded is better but I only had grated on hand so I went with that and it was still good.

Enjoy! Super tasty and it came together in no time with very little work!
