These cookies are soooo yummy, and aren't laden with a bunch of extra stuff like sugar, butter, etc. And they're pretty easy to make, too.
-1 box yellow cake mix
-2 eggs
-1/3 cup vegetable oil
-2-3 Tbsp lemon juice
-about 1/3 C powdered sugar

What You Do:
1. Preheat the oven to 375 degrees F.
Spray cookie sheet with cooking spray (I used these fun backing mats that I got from my bridal shower--thanks Bree!
2. Mix together the cake mix, lemon juice, 2 eggs, and vegetable oil with a mixer. The dough will be sticky.
3. Put the powdered sugar into a small bowl (before your hands get messy).
Take about a spoonful of the dough (or eyeball it because this gets SUPER sticky), and as best as you can, form it into about 1" ball. I won't lie, this is difficult.
Roll the ball around in the powdered sugar, and place it on the baking sheet.
4. Bake for 6-8 minutes, checking around 6 minutes to make sure they don't burn. Mine were done around 7.5 minutes. They will be just slightly brown on the edges.
5. Let them sit for about 5 minutes before putting them on a cooling rack....or spreading them out on a plate, like I did.
These are light and really tasty. I would definitely make these again, for us, or to bring to a BBQ or something. The little girls that I made them for really loved them, too.
