Recipe Files: Greek Roasted Tilapia

I've got another great tilapia recipe for you, and this one is simple and delicious!
Plus, I have some recommendations for how to make it even better!

What You Need:
-1 lb tilapia filets
-2-3Tbsp minced garlic
-2 tsp olive oil
-1 1/3 cup diced tomatoes (roughly 3 tomatoes on the vine)
-1/2 Cup (or more) feta cheese
-2/3 C chopped parsley
-salt and pepper
-non stick cooking spray
**Optional: Cavendar's Greek Seasoning


What You Do:
1. Preheat the oven to 400 degrees.
   In a medium bowl, mix tomatoes, parsley, garlic, olive oil and feta.

2. Spray a baking dish with non-stick cooking spray. 
Lightly spray both sides of the tilapia filets with nonstick olive oil. Add salt and pepper to both sides. **If you have Cavender's Greek seasoning, add on a dash of this on each side as well for added Greek Flavor**

3. Place the filets side-by-side in the baking dish. 

4. Place the tomato mixture on top of the filets. 
Bake for 13-17 minutes, until the fish flakes easily with a fork.

I served mine over rice and it was VERY tasty:

This meal could likely be made in a crock pot, with foil packets, as I've shared in other fish recipes.
