I've finally been trying out some new recipes lately (check out my chili recipe from last week here if you missed it), and this one was also a big hit in our house! Apparently, based on the Instagram feedback and requests for the recipe, it was a hit there as well! So I'm here to share with you my version of the recipe for Bang Bang Shrimp Pasta (found on Pinterest, of course).
This one is super simple, quick, and packed with flavor!
What You Need:
-1 lb (or more) of shrimp
-1 Tbsp coconut oil (I used butter instead)
-2 cloves of garlic, minced (or 1 tsp from jar)
-2 tsp paprika
-black pepper to taste
-1 Tbsp dried parsley (for garnish)
For the Sauce:
-1/2 Cup mayo (I used light)
-1/2 Cup Thai sweet chili sauce
-2 cloves of minced garlic (or 1 tsp from jar)
-2 Tbsp lime juice
-1/8 tsp crushed red pepper flakes
What You Do:
1. Cook the pasta in a large pot according to package directions. When done, drain the pasta and return to the pot.
2. While the pasta is cooking, mix together the ingredients for the sauce. Set aside.
3. Place the uncooked shrimp into a medium sized bowl (or colander) and add in the paprika, pepper, and 1 tsp of minced garlic. Toss/mix to coat more evenly.
4. Heat the coconut oil (or butter, in my case) on medium heat for a minute, and then add in the shrimp. Heat until cooked through (mine were pre-cooked shrimp so it didn't take long). If pasta is not ready, set aside.
5. Once pasta is ready, add the shrimp to the pasta, along with the sauce. Toss until evenly combined.
6. Garnish with the parsley flakes and serve!
It may not be the healthiest of meals, but it sure was tasty!

ReplyDeleteOk...I'm going to be the Negative Nancy here... I actually tried to make this Sunday night. And I say tried because I didn't realize the recipe called for mayo and I'm just as anti-mayo as you can get. I mixed the sauce together and couldn't get past the look of it. I'm sorry, but I reverted back to an old shrimp recipe instead. Glad it worked for you!

ReplyDeleteThis sounds so good because I love spicy/Thai, but I would have to substitute chicken for the shrimp! Also, I actually made crockpot chili yesterday from the recipe you posted last week, and it was amazing! It was the perfect snow day meal and made enough so that I will have leftovers for a few dinners this week..so nice to come home from class/clinical and not have to worry about cooking dinner!
