Because: Yum!
You all know of my love affair with buffalo chicken dip, but I've never made it myself. This weekend's party with some friends seemed like a good time to try out one of the recipes I found out there and it was a huge hit!!
If you're looking for something easy, quick and crowd-pleasing, this is it!
What You Need:
~2 12 oz cans of chunk chicken, drained
~2 8 oz blocks of cream cheese (we did 1/3 less fat kind)
~1 cup ranch dressing
~1 package shredded cheddar cheese (approximately 2 cups)
~Franks Hot Sauce (we used Buffalo), between 1-2 cups, depending on your heat preference
~Chips of your choice--I prefer Scoops!
Obviously this is not a diet food. Let's move on.
What You Do:
1. I used a 4 qt crock pot and turned the heat onto high. Let it heat up a bit and then add in the cream cheese which has softened a bit (I left mine out of the fridge for about 20 minutes before I started making the recipe--or you can microwave it a bit to soften). Let it heat up a bit in there and melt (with the lid still off).
2. Add the drained chicken, ranch dressing and the cheddar cheese. Mix well.
3. Let everything melt together a bit before you start adding the Franks hot sauce. When you do, add it in 1/2 Cup increments until you reach the desired heat.
1 Cup=not that hot; 1.5 Cups=some heat 2 Cup=Hot Hot!
We used 1 1/2 cups and it was perfect for us.
Mix it all together, put the lid on and let it heat for about an hour, stirring occasionally.
4. Turn the crock pot to Low or Warm during the time you're serving it up.
Enjoy this heavenly goodness!!
I was tempted to add a dollop of this to the top of my burger (I didn't), or to a salad (I didn't), but I think it would be tasty :)

ReplyDeleteI always make this for family events but I never thought to make in crockpot! I love it! I usually just boil my own chicken breast instead of the can chicken (SO much better). My friend buys the cooked rotisserie chicken to put in her dip and that's tasty too!

ReplyDeleteYUM! This is one of my favs! The only difference I do is that I use real chicken, not canned. But hey, I'm sure canned is much easier!
ReplyDeleteThis is my fave dip. But I've never had it with ranch dressing. We add just the ranch seasoning packet (like the Hidden Valley kind) instead of the dressing and it makes the dip a lot more like a chicken salad consistency. It's SO good!
ReplyDeleteYes! This is the same recipe I use! Except I use a rotisserie chicken and shred it from there instead of canned. 5 ingredients! You can't beat it! Now I want to make it :)

ReplyDeleteIf I go to a party and they have this dip......I pretty much take it off into the corner and hide for an hour while I consume the entire thing hahahhaha. So dang good. I also like using a rotisserie chicken from costco to make it!

We make ours the same way. I used to insist on boiled fresh chicken because canned grossed me out, then my husband tricked me one time... and you can't taste the difference haha!
ReplyDeleteThis recipe looks so yummy - and I know B would love it, because, buffalo! So sad that I can't eat it...unless I want to be up all night with a screaming baby. WHY oh, why does the good stuff always have dairy (ie cheese - I miss my cheese!) in it??? Sigh. Hopefully Vivi will grow past this soon so I can get back to my old cheese loving ways, lol!
ReplyDeleteUsing chicken from the can sounds so much easier than boiling chicken breasts and shredding them myself like what I've done in the past. Not again! I love the multigrain scoop chips for the dip!

ReplyDeleteThis dip is amazing! I made it this winter when my roommates and I would watch football games. I would also make enough so that we would have leftovers for days and we would put it on everything we ate! I know that some people chose to make it in a pan in the oven, but I think its better to make in the crockpot because its easier to keep/serve warm.
