I'm here to share another super easy, flavorful and relatively light dinner idea with you guys! And it's a one-pot meal which means EASY and QUICK clean up!
I actually adapted this recipe from two separate recipes, and kind of played with them both to create this one dish.

~1 box penne
~about 2 pounds broccoli head, cut into pieces/chopped
~7 oz sundried tomatoes
~4 Tbsp pesto
~juice of one lemon (2-3 Tbsp)
~3 cloves of garlic, minced (1.5 tsp minced garlic from jar)
~1 Cup feta cheese
*I've also added a can of chicken to this meal to give it some protein and it's also delicious
What You Do:
1. Cook the pasta in salted, boiling water according to the package directions. About 5 minutes before the end of the pasta cook time, add in the cut up broccoli and continue to cook.
2. Drain the pasta and broccoli into a colander. While those are in the colander, heat up the garlic and sun-dried tomatoes in the bottom of the same pot that you just used and cook for about 1-2 minutes.

4. Add the broccoli and pasta back into the pot, and mix together. Then add in the lemon juice and pesto. Mix, then add in the feta and stir to combine over low heat.
5. Serve it up and enjoy!
Like I said, mega easy, and not even that much hands on time! Hopefully this graces your table sometime during these warmer months!
