Recipe: Feta and Sun-Dried Tomato Meatloaf

Apparently I caught the "try some new recipes" bug recently since I posted a new one last week and then tried 2 other new ones. One was made with my new Ninja Cooking System (if you haven't heard of this thing--you need to get one--it's awesome!). The other recipe I made was one that I saw on  Megan's blog and was instantly intrigued.
And, as soon as I said the word "meatloaf" to MG, he was ALLLLLL about it. 

I was like Megan--meatloaf just doesn't sound that appetizing. I've made it and had it before and it's ok, but nothing that I crave.
But when I saw "feta" and "sun-dried tomatoes" I knew this was something that would HAVE to be right up my alley. And I was not wrong or disappointed.

What You Need:

-1 lb ground turkey
-1/2 cup feta cheese
-1/4 cup sun-dried tomatoes, finely chopped
   *original recipe called for garlic and herb marinated; I used regular
-2 tsp minced garlic
-1/2 cup plain breadcrumbs 
-1/3 cup, chopped parsley
-2 eggs at room temperature, lightly beaten
-2 Tbsp whole milk (I used 1% and it was fine)
-1 tsp ground black pepper

What You Do:

1. Preheat your oven to 375 degrees F. Make sure there is a rack in the center of the oven.

2. Spray a 9x5 baking pan with non-stick spray. (Trust me, and do this beforehand so you dont have to wash your hands in between to spray, and then get them dirty again).

3. In a large bowl, mix together the bread crumbs, sun-dried tomatoes, parsley, black pepper, feta, garlic, eggs, milk. 

4. Add in the ground turkey and mix together. Be mindful of not over-working the meat so that it becomes too tough when cooking.

5. Pack the meat into the baking pan. Mine seemed a little large for how much meat I had, so I packed it into about 3/4 of the pan and it cooked just fine. Bake for 45 minutes, until the meat is cooked through.
6. Remove it from the oven once it's done and let it rest for about 5 minutes.

We served ours with some artichoke hearts that I sauteed in a pan (because what goes better with sundried tomatoes and feta than artichoke hearts?) and some mixed veggies. 

This dish was an absolute treat! It was SO flavorful and yummy. MG said that it beat out his mom's meatloaf from when he was growing up. Win! :)

    I'm not a meatloaf fan, I think I've only eaten it once, but I do enjoy sun-dried tomatoes.
