I know it's been a while since I teased you with the prospect of this recipe, and then I didn't post it. Shame on me! But, I'm back to posting and I'm ready to share my take on this delicious recipe with you guys
(Don't get overwhelmed by the ingredients list--it's not that bad!)
What You Need
For the meatballs:
-1 lb. ground chicken
-4 green onions, chopped
-1/4 C chopped cilantro
-1 Tbsp fish sauce (*substitute: I used half soy sauce and half hoisin sauce)
-1 Tbsp red curry paste
-1 Cup breadcrumbs
-1 egg
-salt and pepper to taste
For the peanut sauce:
-1 Tbsp sesame oil
-1 can coconut milk
-1 Tbsp red curry paste
-2 Tbsp peanut butter
-salt and pepper to taste
-1 Tbsp brown sugar
-pinch of chili flakes
What You Do:
1. Preheat your oven to 375 degrees F.
2. In a bowl, mix together all of the meatball ingredients well. Form the meatballs into about 1 inch sized balls and place on a baking sheet. Bake for 30 minutes.
3. While the meatballs are cooking, make the sauce using a medium sauce pan/skillet. Heat up the oil. Add in the red curry paste and let it cook for a couple of minutes. Then add in the rest of the ingredients (coconut milk, peanut butter, salt/pepper, brown sugar, chili flakes).
Stir it together and cook for about 5 minutes.

4. Once the meatballs are out of the oven, add them to the sauce, coating them on all sides.
Let them soak up that deliciousness!
5. Garnish with cilantro and serve over rice or mashed potatoes.

This is one that got better the next day as leftovers, as the meatballs soaked in the sauce even more. Super tasty!
