If you've been around these parts for a bit, you know that I love feta. I also love artichokes, and basically any Greek dish. This is another spin on the easy feta dip I've posted before, but this one involves chicken!
It's SUPER easy to throw together and the flavors are amazing!
-3-4 chicken breasts (about 1.5 pounds)
-2-3 tomatoes on the vine, diced
-1 can quartered artichoke hearts, drained and chopped
-2-3 green onions, chopped
-1 Tbsp Cavendar's Greek seasoning (this stuff is so good!)
-3/4 C. feta cheese
-1/4 cup olive oil
What You Do:
1. Preheat the oven to 350F.
2. In a large bowl, mix the chopped veggies (tomatoes, artichokes, green onions) with the olive oil, 1/2 C. feta and the green seasoning.
3. Using a 9x13 baking dish, coat with nonstick cooking spray and lay chicken breasts in the baking dish.
4. Top with the veggie mixture. Sprinkle the remaining feta cheese on top (add more if you like)
5. Bake for 40-50 minutes, until cooked through.
You can serve this over rice or pita, or eat it by itself. The original recipe also says you can used leftovers in a salad.
Yummy taste and quick to make--it doesn't get much better!!
