When I say it's the best, I'm not even lying. I found the best egg salad recipe on Pinterest months ago, and then made it again last week and it was SO good that I had to share!
What You Need:
-6 hard boiled eggs, diced
-1/2 C diced celery (about 2 stalks)
-2 1/2 Tbsp light mayo
-1 Tbsp vinegar (I used red wine vinegar)
-1/4 tsp onion powder
-1/2 tsp salt (to taste)
-1/2 tsp Worcestershire sauce
-1/8 tsp pepper
What You Do:
1. To make the perfect hard boiled egg, place the eggs in a sauce pan with about an inch of water above the eggs. Put them on the stove over medium heat until it boils. Once boiling, turn off heat and cover the pan with a lid. Let sit for 12 minutes. Run under cold water and peel.
2. Mix all of the ingredients listed above. Put in the fridge to cool, then put it on some bread and enjoy the deliciousness!

{1} I want to wish my blog soul mate and fellow March baby the very happiest of birthdays (we really are soulmates through and through!) Jessi, you are an amazing woman who I've loved becoming friends with and bonding over silly things during the last several months! You make me laugh and I love how caring you are. And you're one of the most adorable little pregnant ladies ever ;) I wish I could celebrate with you in person, but since I can't, I hope you have the best birthday ever (minus the real wine haha)!
{2} I wanted to thank everyone who sent prayers and positive thoughts my dad's way over the past few days. He was supposed to have a procedure on his heart today to check for any blockages that may be contributing to some of his difficulties lately, but he went to the ER yesterday afternoon because he hadn't been feeling well and was having trouble breathing. We're hoping that being in the hands of the knowledgable hospital staff will get everything sorted out, have him feeling better, and able to have this procedure, even if it's not today. And if he can't, we just want him to feel better, sooner rather than later. If you have a spare spot in your prayers for him, please send them his way today!

ReplyDeleteHow do I go from family to egg salad as a transition.......well I will tell you I had no idea that is how to boil eggs (turn off the hot water with a lid.......that sounds so practical why have I never thought of that??) I am obsessed with egg salad I add a little yellow mustard to mine. Great recipe!!

I've never added vinegar to egg salad - now I'm intrigued. I normally stick with a mayo, mustard combo. Maybe add some hot sauce to get a little crazy.
